Parmesan Truffle Fries

These fries are the perfect side to any burger or sandwich. My favorite thing to pair them with is a brie burger with fig spread and arugula, but I mean it when I say they pair with anything.

They require very minimal work, but they still feel like a fancy little treat, making them the perfect side dish when you’re cooking for guests — it’ll make you look like a pro.

You’ll need:

  • Russet potatoes (you could also use white potato, or even yukon — use what ya got!)
  • Olive oil
  • Salt and pepper
  • Truffle oil
  • Parmesan

Step One: Prep Your Taters

Preheat your oven to 425 F. Cut your potatoes into wedges and spread them out on a sheet tray. Toss them in olive oil, kosher salt, and cracked pepper, and give them a good stir with your (clean) hands to ensure they are evenly coated.

I prefer to use my hands to stir, rather than a spatula, because I can use my fingertips to tell if the potatoes are sufficiently coated, rather than relying on eyesight alone.

Step Two: Cook Your Taters

I cooked these bad boys for a total of about 30 minutes, giving them a stir halfway through. Some of them may stick to the pan at the halfway point — don’t force them! They should release when they’re ready.

Note: If you want your potatoes crispier, you have a few options: (1) cook them longer, about 40 minutes total, or (2) cut them thinner and cook for roughly 25 minutes (I’m guessing that cook time, please just keep an eye on them).

Step Three: Add Parmesan

Once you have about two minutes or so left on your timer, take your potatoes out, sprinkle them with grated parmesan, and toss them back in.

Step Four: Finishing Touches

Once the taters are cooked and your parmesan crispy, pop them out of the oven and sprinkle them with flaky sea salt (if you’ve got it; if not, use more kosher salt), and drizzle them with truffle oil.

Additional notes:

If you can’t find or afford truffle oil, you could also cook your potatoes in truffle salt instead of kosher salt.

If you don’t like the taste of truffles, you can definitely skip it! These fries are also good with just parmesan.

If you would rather use frozen french fries, cook them to the time specified on the bag, just add the parmesan at that two minute mark, and finish with truffle oil or salt.
